JOB: PRODUCTION & COMPLIANCE MANAGER

 

LOCATION: Hudson Valley Charcuterie / Raven & Boar

East Chatham, New York

Hudson Valley Charcuterie is a USDA-inspected value-added meat processing facility specializing in whole-animal butchery, artisanal charcuterie, fresh sausage production, and premium pork products sourced from pasture-raised livestock. We are a small, mission-driven company committed to supporting regional agriculture while producing exceptional food with integrity, craftsmanship, and attention to detail.

 

POSITION SUMMARY

 

We are seeking an experienced Production & Compliance Manager to oversee daily operations within our USDA-inspected facility. This position combines production leadership, food safety management, inventory control, wholesale fulfillment, and team supervision.

 

The ideal candidate possesses strong butchery and food production skills, understands USDA food safety requirements, and is comfortable managing multiple priorities in a fast-paced production environment.

 

RESPONSIBILITIES

 

Production Management

• Manage day-to-day production operations

• Coordinate weekly production schedules

• Oversee fabrication of pork primals and retail cuts

• Lead production of fresh sausage and value-added products

• Monitor yields and production efficiency

• Train and supervise production staff

 

Food Safety & Compliance

• Maintain HACCP plans, SOPs, SSOPs, and GMP programs

• Conduct pre-operational and operational inspections

• Manage temperature monitoring and food safety records

• Coordinate environmental and product testing programs

• Interface professionally with USDA inspectors

• Review labels and ensure regulatory compliance

 

Inventory & Procurement

• Manage ingredient, packaging, and supply inventories

• Coordinate purchasing and receiving

• Track production inputs and finished goods

• Maintain inventory systems and production records

 

Wholesale & Fulfillment

• Coordinate wholesale order fulfillment

• Manage product packaging and labeling

• Ensure accurate order preparation and shipment

• Support customer and distributor relationships

 

QUALIFICATIONS

 

Required

• 3+ years food production, butchery, or meat processing experience

• Strong knife skills and fabrication experience

• Experience managing food safety systems

• Ability to lift 50+ pounds repeatedly

• Strong organizational and communication skills

• We are a very small team and rely on ever member to be on time for every shift. Even if you’re not expected to drive for this job, you will need to have a reliable commuting plan ( and backup plan ) to show your ability to arrive to work consistently and on time

 

Preferred

• HACCP certification

• USDA-inspected processing experience

• Food Safety certification ( ie: Servsafe, or similar )

• Experience with inventory management systems

• Experience training staff

• Knowledge of charcuterie, sausage production, and whole-animal utilization

 

COMPENSATION

 

• $25-$30 / hr. Competitive compensation based on experience. Opportunities for advancement, continuing education, and participation in a growing regional food business.
