ABOUT US
Hudson Valley Charcuterie is a USDA-inspected meat processing facility specializing in whole-animal butchery, artisanal sausage, charcuterie, and value-added products made from pasture-raised livestock. We are a small, hands-on team committed to traditional craftsmanship, exceptional food quality, and supporting regional agriculture.

 

POSITION
This role is ideal for someone interested in butchery, culinary arts, farming, food production, fermentation, or local food systems. No formal butchery experience is required. We are looking for a dependable, detail-oriented individual eager to learn specialized skills in a professional production environment.

 

WHAT YOU WILL LEARN
• Whole-animal butchery and meat fabrication

• Sausage making, charcuterie, and curing

• USDA food processing and HACCP systems

• Inventory management and wholesale fulfillment

• Production planning and small food business operations

 

QUALIFICATIONS
Required:

• Strong work ethic and willingness to learn

• Reliable transportation and consistent attendance

• Ability to work independently and as part of a team

• Comfortable working in refrigerated environments

• Ability to lift 50 pounds repeatedly

 

Preferred:

• Interest in farming, food production, culinary arts, or local food systems

• Kitchen, farm, warehouse, or food-service experience

• Basic knife skills

• Food Safety certification 

 

 

RESPONSIBILITIES

 

Assist with:

• Whole-animal butchery and value-added meat production

• Sausage, charcuterie, packaging, labeling, and order fulfillment

• USDA food safety, sanitation, and HACCP procedures

• Inventory management, receiving, and stock organization

• Wholesale and farmers market order preparation

• Equipment cleaning, maintenance, and facility sanitation

 

WORK ENVIRONMENT

 

This is a physically active position involving standing, lifting, bending, repetitive tasks, and working in refrigerated production environments.
